I will be moving a new country and i will have to leave behind some components in my PC. Currently my rig is composed of:

CPU: Intel i5-6500
Board: Msi B150M Bazooka
GPU: Msi 1060 6gb armor
PSU: Smart SE 630W
Storage: 120gb ssd ; 1tb hdd

I am planning to leave behind my board, my sdd (i was thinking of getting a 250gb), ram, maybe the cpu too?

I am not very sure what to do.

Should i upgrade my CPU while im at it and get a new board at the same time? or my current CPU is good enough. I will be giving the stuff im not taking to my cousin. What do you guys suggest me to do?

Edit: I am not ready to upgrade my GPU yet.

Leave your case and power supply behind, maybe because of space and weight on the plane? Take all the rest with you, you can get a new PSU and Case when you get to your destination.

In a new country, it is unlikely that you can buy parts cheaper than(presumably) the USA.
If you want an upgrade, buy your parts where you are.

Find out what power you will have in a new location.
You will want a PSU that is compatible.

Since you seem to want an upgrade, buy a motherboard/cpu/ram/ssd/windows locally and get them installed.
Take your GTX1060 with you.
Time to go 8th gen cpu of some sort.
Consider a ITX motherboard, certainly no more than M-ATX.
Take them in carry on luggage.
Buy a proper psu when you arrive as well as a case and monitor/keyboard.
Take your mouse if you like it.

Exactly bro. Your system is good. And not need to upgrade now.
Try to leave case and powersupply only. And left motherboard also. Because you can buy z170 motherboard at cheap price.
