Upgrading from a EVGA 1070 FTW to a GTX 1080ti, i7 7700k to i7 8700k. Gonna keep my Corsair vengeance Ram (32gb)

*Please pick me out a 1tb SSD
*New motherboard you recommend (like the best one) as I hate the rog strix z270e... Is Asus the best Mobo makers because there software sucks (Asus aura)..must support 8th gen CPU obviously.
*Best GTX 1080ti version
*I use a nzxt s340 elite so will this be big enough for a 1080ti? If not, what's your recommendation on a new case?.
*Recommended PSU, mine is a supernova nex 650g
*Is my h100i v2 a good CPU cooler?
 
From what I've read the only 1080 Ti that don't throttle when above 54C are the hybrid/liquid-cooled ones.

Asus is said to be the best motherboard manufacturer, I've heard they have the best fan controls (and I'm sure among other things), but I've checked out the ASRock Taichi and it seems to have all the makings of a top notch motherboard.

I think you could attached the GPU's radiator to the rear or top of your S340, but maybe you want a larger case.

Your CPU cooler should be enough. If not I'd consider an NZXT X62 or similiar.

Your power supply is not as good as the other EVGA Gold rated PSUs.

Your build is still pretty solid. You wont get any significant gain for the money you will be spending, specially for gaming. You should rather stick to this build if you are gaming.
However if this is for productivity, switching to Ryzen will be a better idea...

Dont go for the 1080ti if you are below 1440p/144hz...
