Upgrading older iMac to a SSD drive.

I have a 2009 24" iMac that I'd like to upgrade with a SATA III ssd drive. Can I just swap drives and expect the faster r/w speeds

Yes, although the process of changing the HDD is extremely laborious to say the least.

Depends on if your imac is early or late 2009, the later ones have a heat sensor issue you probably should google for more info.
