~and wondering the best path for upgrading this PC
*Budget is around $350
Ideally would like to be able run Ark: Survival Evolved and Hellion at mid to high graphics at decent FPS.

I see a comment about upgrading the cooling system for a few of the suggestions, is this necessary?

If you keep the CPU, you can get loads of extra performance simply by dropping in a new, faster gfx card. If I read the nameplate on the PSU correctly in the picture, it appears you have a cheap, low quality "500W" PSU with light-weight +12V rails. So the GTX 1060 3GB would be the best card I would suggest you can safely use. Should alloow you to play any game at max/near max settings at 1080p.
