Hello I'd like to upgrade my CPU and GPU, I've already upgraded the RAM but this is what it have currently

Operating System

Windows 10 Home 64-bit

CPU

Intel Core i7 @ 3.60GHz
Kaby Lake 14nm Technology

RAM

32,0GB

Motherboard

HP 82F1 (U3E1)

Graphics

S24C300 (1920x1080@60Hz)
ASUS VP247 (1920x1080@60Hz)
3071MB NVIDIA GeForce GTX 1060 3GB (HP)

Storage

119GB SanDisk SD8SB8U-128G-1006 (SSD)
931GB Western Digital WDC WD10EZEX-60WN4A0 (SATA)
1863GB Seagate ST2000DM006-2DM164 (SATA)

I'm open for any suggestions around a new processor and a new graphics card, I'd like something newer and I use this both as a gaming computer but also workstation.

If you have the 7700, that...
First, check with HP support to determine what CPUs are supported by your system. Then you can determine what you want and can afford. IMHO, upgrading a pre-built is almost never cost effective. There may be BIOS limitations as to what CPU you can upgrade to, as well as the possibility that, if you try to upgrade your GPU, you may have to upgrade your PSU as well. Then you have to consider if the PSU and/or motherboard are proprietary, and therefore you are limited to HP as your sole source of upgrade parts.

If you have the 7700, that looks like the top CPU that HP lists. You could get a k series 7700 and overclock the CPU if that motherboard supports overclocking.
As far as upgrading that particular computer, I would just upgrade the Video card. HP lists that computer having a 300 watt power supply. That's a pretty low wattage power supply and quite often, prebuilt computers from big manufacturers like HP and Dell have proprietary supplies that you have to buy from them to upgrade or replace.
