Upgrading RAID Card.

I have a 4 drive raid 5 on an old adaptec PERC and just got a new Areca 1220. Is it possible to just plug the drives into the new controller and be done?

Nope. Most RAID cards set up their metadata and block organization in a proprietary manner that's specific to each manufacturer and RAID controller.

You will need to back up the data, move the drives to the new controller, set up your RAID 5 again, format and create a partition, then copy the data back.
