Currently have a Ryzen 3 3200G on a ASUS Prime A320M-K and want to upgrade to the Ryzen 5 3600 and was wondering if I would need to update the BIOS or not as they are both the 3000 series

I would update the BIOS to Version 5602 to be sure you get the best performance and RAM compatibility with the 3600.
Version 5602
2020/07/27 10.32 MBytes
PRIME A320M-K BIOS 5602
"Improve system performance
Improve DRAM stability
Improve system stability
Improve system compatibility
Fixed AI suite 3 issue
Update AM4 AGESA to 1006
Fixed HDMI and DP sound issue"

Possibly no but do it anyway as later BIOS's provide noteable benefits for third gen CPU's.

Also do a CMOS reset after updating.

And also uninstall the video drivers...assuming you used the 3200g iGPU. Doing it with DDU to clean up is a good idea too.
