I have a https://www.gigabyte.com/Motherboard/B450-Gaming-X-rev-1x#kf, and found a RAM kit that's on discount:

https://www.newegg.com/corsair-32gb-288-pin-ddr4-sdram/p/N82E16820236596?Item=N82E16820236596 (CMK32GX4M2D3600C18)

The website lists 3600 (O.C.) so I assume it only supports overclocked sticks up to 3600MHz? But the website doesn't list 3000 MHz and my current one is that speed.

For reference this is my current RAM: https://www.newegg.com/corsair-8gb-288-pin-ddr4-sdram/p/N82E16820236351 (CMK8GX4M1D3000C16)

Will my motherboard support the 32GB (2x16GB) sticks just fine?

The same sticks but on Corsair website:

1x8GB - https://www.corsair.com/es/en/Categ...Hz-C16-Memory-Kit---Black/p/CMK8GX4M1D3000C16

2x16GB - https://www.corsair.com/es/en/Categories/Products/Memory/VENGEANCE-LPX/p/CMK32GX4M2D3600C18

I don't see support for your Pinnacle Ridge Ryzen 5 2600 on memory kits over 3200mhz, so no, that kit will not work at it's rated speed. It MIGHT "work", but most probably at a maximum of 3200mhz. That goes for ANY memory kit faster than 3200mhz AND there are no guarantees of running even at 3200mhz in all cases. It depends on the memory kit and the motherboard, including what BIOS version it is running.

So, a 3200mhz kit would be the maximum speed I'd target with your system, and I'd make absolutely sure it's a memory kit that's validated for your board using either the Corsair memory finder, G.Skill memory configurator or Crucial memory advisor.
