Hello! I am having the weirdest problem and wanna see if anyone had gone through this.

So, I just built a new PC and everything booted up so smoothly, fast, all good. All parts working great. I installed Windows 7 from a USB, but once I log into Windows, the USB ports stop being recognized. And I mean all of them! The bios recognizes them Just fine but windows runs and poof, gone.

Theory: Could my motherboard (z170 Asus) possibly be forcing me to go to another Windows, that's more recent? Like 10

That just means you haven't install the chipset driver or the usb3 drivers. You can find the most current version on Asus's website for whichever z170 you bought. They (all the drivers) will be listed under the Support section for that board. You should install all the drivers listed for the OS, win7 64bit I assume, beginning with the Chipset driver.

That's what I know, but the problem is how do I install them if it won't recognize the ports? I don't have a CD reader installed, and the CD reader I have is portable and also requires a driver.
