I was wondering how to do this as I already have a lot of data on my two drives and it takes forever to start up. I have two 250gb hdd in a raid that aren't in use. Could I use those for a boot drive?

Solution
A single SSD trumps any combination of HDD in RAID 0.
And with todays prices, why would you not go for an SSD?

Samsung 850 EVO - 250GB - $79
SanDisk 960GB SSD - $220 the other day
Sandisk 480GB SSD - $120 yesterday.
You could, but if either fails everything on both drives is lost, and RAID 0 HDDs are really not very fast compared to a slow SSD.

If you want faster boot and general use get an SSD. Prices are very good on many of the Black Friday and Cyber Monday sales if you are in the US.

I just have a ton of HDDs laying around. My older brother moved out of the house after he started his tech company and left behind a load of servers, hdds, cables, gpus, cpus, etc... Wondering if I could put them to use! Guess I'll just sell em and buy a couple ssds.
