The first one will provide a more stable connection, those rj45 female adpaters can be quite flakey.
Neither will say cause you to loose 10-20% speed, but the seocnd one could have a poor connection that will either degrade you to 10/100 speeds or flat out 0.
Using either one you are still limited to the 300ft (100 meter) distance limitation of ethernet cable.
If this is to be something hidden to extend a cable then that is fine.
If you are say trying to provide networking between Room A to Room C by uisng the UTP cat5e cable put into your house, then I would connect both of those cables and plug it into a switch, that way it will provide networking to that room as well, and also re-amplify the signal.
