I've currently got a i5 6600k with 16gb of RAM and a 1TB HDD (full specs in signature) and I'd like to know how many virtual machines this will allow me to run?

I'm looking to set up a lab for learning a bit more about networking and an not sure if I should buy an i7 so I can run more VMs.
 
Solution
It will all depend on what the VM's are doing....more memory (and more threads) will always help with being able to handle more VM instances.

I suggest just doing it with the equipment you have, start increasing the number running your full use-case, and see what the results are.
