If cost isn't a problem, the 2600 is the most bang for the buck. 6 strong cores/12 threads. Your RAM has a better chance of working with the 2000 series Ryzen than the 1000 series as well.

Go for the B series motherboards for a 6 core.
Well, 2600 is still within my budget since I'll be selling the old parts anyway. Also, is the difference between 1600 and 2600 significant?

go for the r5 2600 i have the 2600x and it does an excellent job
but there is a certain price difference between the 2600 and the 2600x but the 2600 is an excellent pric for a medium budget

4 Cores are not enough really for todays software.
4 cores/8 threads still work well - even my current i7-2600k runs software well, mainly because of the 8 threads.

I would not recommend anything less than a 4c/8t to run todays and future software.
Stick with AMD to get the extra future proof. The i5-7500 is only 4 core where as the i7-7000 would be the better choice - 4c/8t
