I am currently planning out my first attempt at a water cooling loop. I want to cool my GPU and CPU.
Im trying to figure out where I can mount my 250 Res after i've removed the optical and hardrive bays. Here's a diagram:

Is there some sought of bracket I could buy?

I will be using the Enthoo Pro Case.

Cheers!

Right, that is typically what people do, drill into the case to mount it. If that isn't an option then mounting onto the pump is probably the best option. I guess if you got creative with how you do it you could purchase a rad mount but you would have to be careful that you place it in such a way that it keeps the pump primed.
Depending on the res you buy, it will probably come with a mounting bracket, but if not you can purchase one for a couple of bucks. You will most likely have to drill mounting holes on your case for it.
Alternately, depending on the pump you get, you may be able to mount it directly on top of the pump.

The problem is though there will be no metal to screw it onto. Unless I screw it onto the back panel but then I will run into issues

Unless I put on the side panel. Wouldn't screwing it into the side panel cause issues? Or could I actually do that. I hope this makes sense. Also I plan on doing some modding, screwing out holes e.t.c so that's not an issue.
