Watercooling?

Depends...exactly what all are you cooling?

Most of your rad decision is dependent upon what components you are cooling. Other than surface size, nothing is different between the 2 you listed. I am not a fan of the DD GT's; I'd rather spend my money on the Swiftech 320 and 220 before I bought those. The DD BIX rads are pretty dang good, but also pretty pricey.

You really need to have the components you want to cool set in stone before you move forward with what needs to disperse the heat they create.
 
In order to answer your question specifically you will have to provide more information. What are the CPU, video cards, and northbridge/ southbridge you plan on cooling?

In general I would go with a triple fan radiator if you plan on cooling a CPU and 2 video cards in one loop. This will provide greater surface area and also give you more fan options to choose from.

Cooling the northbridge and southbridge with water generally won't yield significantly greater results. It may increase your overclock by a small percentage in the right situation, but usually the CPU will have reached its limit before the chipset has reached its.

 
^ Correct, it is pointless to WC the NB/SB...esp the SB. The northbridge can get you a little higher OC if you really push it, but you have to be at the thermal threshold of the chipset for WC to make a difference in OC'ing.

Depending on what CPU and GPUs you run will make a decent difference in your rad decision. A Core i7 really needs at minimum, a 2x120 rad by itself. Depending on your GPUs, you might need 1.5-2x120 for those each, as well.

You will also need a good pump to push that, and I would hope you run 1/2" tubing all around.
