GPU - RTX 2080 Super
CPU - i5 8600k overclocked at 4.8GHz
MOBO - Gigabyte z370p d3-cf
RAM - 16GB Vengeance LPX 3200Mhz

What PSU would I need/ are these options ok?

None of them, you really shouldn't plan to run a £700 gpu with a budget psu. Cheaping out on the most important part of the pc isn't the most thought out solution.

Spend a bit more, get a seasonic gx650 , or a seasonic gc 650 if you don't care for modular cables. The seasonic core series is supposedly a re-brand of the focus series.
