Hard drives have a small amount of memory on them called cache. This is to make the apparent performance really fast for small data transfers. Some applications, when writing to the drive, may refuse to respond until the drive comes back saying "yeah I wrote it." So to get around this, the data is written to cache first, reported as done, then at some point later, the hard drive will commit that data. The application doesn't know any better and goes back to doing whatever it was doing sooner.
