Probably not the powerfull build you wanted, well mean that gpu. Might want to take a look at the used market and see what you could get there for roughly the same money.
Some extra info, the two fans since the case comes without them. And see now that this psu is really more expensive when truly looking at Amazon. Hard to find something that is available.

The extra with the AF would help get a 1660s. But is a r5 3600 and 1650s a better buy?Looking at gaming is the 3300X the better choice, if you could fit a 1660 s in ther would be nice. The 1600AF would give some extra money for that, about $23.

Saw one here that was going for €240 on the used market, think he really wanted to get rid of it fast looking at the price, but still.

But what do I do?No what i'm trying to show that with a level of gpu like that the 1600AF doesn't really bottleneck. You only really see if fal behind with CSGO which is very dependent on single core speeds. There you see that the 7NM chips do better because of that single core speed, but the AF still does fine.
But what do I do?

Only thing might be that a B550 motherboard could support later series of cpu's if they continue to make series of cpu's that will fit the AM4 socket. (after 4000 serie)
Yes I do.The AF would stil be a good choice for your budget. With a not too expensive aftermarket cpu cooler is there still the opportunity to overclock.

The Phantek case only comes with one fan, would really add another one. Like,

Yea lolSomeone would be me and for his budget at the time ($700) about what he could have as gpu.
Looking at your build is it about a copy of what he posted before so nothing really new you add here than another option for a psu.
The reason I don’t have the max is because in about 1 year I want to get a b550, so the extra 50 is not worth itYeah not a bad build, would rather have the MSI Max board myself,but you are budget limited. If buying he motherboard at Micro Center, ask them for a small fee to update the bios to make sure it has a compatible bios for the 3600.
Think i'd rather have the case i chose as well, but cases are personal and the Phantek is a fine choice for the budget.
Will be difficult to find such a psu at $75 right now, covid19 really has messed up prices.
