so, i know that AMD's APU stuff like Kaveri is great for general purpose / multimedia / light gaming stuff

and i know that intel's stuff is great for strong single-core stuff like CAD and gaming

so, what's the FX stuff really good for? other than "multithreading", are there types of applications or usage scenarios where the FX stuff would be a great choice?

FX is a viable choice where you are running multithreaded apps that can make use of many cores.
Rendering and editing for example.
They are worthwhile if you are on a strict budget.
I would not consider them a great choice if you have a cpu budget in the $200+ range where Intel of some flavor will do better.

I've heard they're really good for video encoding too, handbreak and streaming they're a tiny bit better than Intel chips, mostly due to having more cores of course.

In my opinion ...NO! People buys Fx processors because they are cheaper and they are like : OMG! the fx 6300 has 6 cores and the I3-4370 has 2 cores, so the fx 6300 is much better. But is not like that and they get fooled because of that.Majority thinks that if the processor has more GHz and more cores it is better , which is a nonsense

AMD BD/PD based chips are good at running Integer based CPU bound workloads that scale across multiple cores.

Problem is, what I described is also known as a "Graphics Processing Unit", and the same workloads that run well on FX run several times faster on GPUs.
