In short stick with the K series.
X series processors are the highest end. K is a step below, but the highest usually available.

X series processors are only available in the highest end processors, but this is categorized by multithread performance. They feature more cores, but due to design limitations each individual core is slightly less powerful than the processors for a lower series.

For gaming, get the 4790K or 6700K as they have better single core performance (the statistic most useful for gaming) and ignore X series processors.
