wanting to play the latest games Crysis,BF2,COD and so forth also want to set up 3 monitors in the future. Dont want to have to upgrade for a couple years.Do you guys think this will work? Do you see any problems with this build?

Yes that would be great for your usage but you should know it is pretty expensive. If you or someone you know could build one for you, you could probably save some cash. Here is a build made of better quality parts and with much better cooling for less cash:
