If you've already got a Ryzen 5 1600 the best improvement is going to be the 1800x... but it isn't going to be much in any aspect. Even going to a 2700X would be a small upgrade. The 1600 is still a darn good CPU and more power than you need for just about anything.

If I were you I'd hold out until the 3000 series based on Zen 2 release sometime next year. That should be a more substantial upgrade.

Yes I would wait for Zen 2. Big improvements coming with Zen 2. It will be on 7nm. It should allow for overclocks to 4.5GHz minimum and the IPC should get a nice boost as well. I'd say we'll be looking at current intel gaming performance on Zen 2. Maybe a little higher. That will be great for AMD. Maybe a bump in core count as well. A good bump in core count would be a disruptive force in the CPU market.
