What CPU to choose for a new gaming/video editing rig late 2017

Hello guys. I’m building a new pc with a 1080ti on board an I stumbled upon a dilemma. Should I choose a 8700k or this socket won’t be developed any futher in the nearest future? I know that 1151v2 is some kind of a fresh rev, but it’s still a 1151, which is almost 3 yo now. So should i stick with 1151v2 or look into a 2066? I am looking into high end gaming and video editing.

PS: I’m not looking into any AMDs, sorry

The Core i7 8700K is going to be the best gaming CPU you can get and a really great editing CPU. I would personally opt for the 8700K but there are better video editing options available on the X299 platform starting with the Core i7 7820X but that may be a bit more than you wanted to spend on just a CPU. It costs $200 more for those 2 extra cores but if you're going it be doing a lot of rendering it might be worth it.

TY so much for your answer! I think i should stick with 8700k now and make up my mind on how to cool that piece of amazing hardware during a moderate OC.
