I thank you for the recommendation, but will wait a bit and see others recommendations as well and then finally edit my build.

Ryzen today is old tech.
You should look at Intel 12th gen processors.
If budget is not an issue, there is nothing better for gaming than the 12900K.

Look for a Z690 motherboard based on ddr4 ram.
It performs the same as ddr5, but ddr4 ram is freely available.

With ssd prices now reasonable, I would use a 2tb samsung 980 pro,
If you now own the HDD, repurpose it as an external backup.

I am not a fan of aio coolers when a top air cooler will do the job.

Then you talk about a motherboard, just because u literally have that exact motherboard, then u talk about the 980 pro, just cause u literally have a 980 pro, sorry but i found those posts so cringe, dont get me wrong. It's amazing that people help eachother, but always recommending specific items cuz u have them is so cringe.
If you have them and like them and wanna share that info with others, fair enough, but that doesn't turn everything below those items into budget. Just because you drive a $500k car, doesn't mean that someone drives a budget one cause he only payed $400k, i think you get the point. If you not plan on playing everything on ultra in 4k you don't even need to worry about being above the 10th generation to make it playable. You don't need more than 6 cores on a cpu for gaming today, a i9 performs the same as a i5 in games, the i9 will just be much faster when it comes to rendering and editing which doesn't show within games. You can also see that in the link you sent yourself, barely a difference between the top 2 cpu and one is i9 and the other one is i5

The OP had included a 980 PRO, I only suggested that a 2tb version and no HDD might be better.
The reason I recommended 12th gen is because the single thread performance is so much improved over 11th gen(which was a boost over 10th gen)
Single thread performance is what is important to most games.
I did not specifically recommend my particular motherboard. I suggested a Z690 motherboard of which there are many.
Lastly, I suggest products that I have used myself and found satisfactory.
Those I have not used, I depend on reviews for which I provide a link.

He put together a $5200 build with a 3080 TI and a 16 core processor for $800 as his first example and u think that budget was an issue?
The graphic card he picked cost more than most people build a computer for, im done here.

That's a much better build than the first. Seriously a 5k build should Never include mechanical storage.

Mice, keyboards, monitors and cases are personal items. You gotta look at them, use them, so pick your poison there. Not a big fan of wireless mice for gaming, most sound fancy, look fancy but have issues with lag, and I'm not a fan of 'light' mice, I prefer one with a little weight to it.

Otherwise it's pretty decently balanced.
