They allow for two (or more) graphics cards to be linked together to split the information to be rendered.
Certain advancements have removed the need for these in specific cases. Modern AMD cards lack the need for a crossfire bridge (AMD equivalent to SLI). All the data is handled through the motherboard.
Do they increase performance???
The SLI bridge just connects the two cards.... the two cards working together can more than double frame rates.. Demanding AAA games like Tom Raider (+96%) and such do very well /// overall you will see about 0% increase from 1 to 2 cards as some games are capped at 60 fps, some don't ever get SLI profiles (As if you needed one with 100 fps on a single card). The more demanding the game, the more of a boost you get from the 2nd card,
Despite some of nVidia's best efforts to increase that gap between their top card and the 2nd tier card, SLI remains a popular performance option.
Two 560 Tis cost $400 and were 40% faster than the 580.
Two 970s were about 40% faster than the 980 and when released the cost of both options was comparable.
