Where will you shop?
Today good graphics cards are all but impossible to buy, let alone at anything like twice MSRP.

I might suggest that you build using a I5-11500 which costs about the same as a 3600.
It has the same 12 threads and a passmark rating of 18203/3229.
3600 rating is 17866/2585.
The second number is the single thread performance which is arguably the more important metric for games.
The 11500 includes good 750 integrated graphics and lets you get started on some games while you shop for a graphics card .

A B560 motherboard will be no more expensive.

pcie 4 ssd devices have impressive sequential performance, but the reality is that you will see very little difference compared to a normal sata ssd.

If you game at 1080p low refresh, 1650 super, 1440p/1080p high refresh 1660super, little future proof 2060super.
Processor 3600 or 10600k.
Motherboard your choice always look for the reviews.
Corsair vengeance 3000mhz is enough.
Hardisk, ssd your choice

With all of the shortage is going on and the price is going up I don’t see how you can scrape the price down

Build your pc. Everything except for final decision on the psu, as that might change. Take whatever money is left over and go get the baddest, strongest, fastest, biggest, meanest gpu you can justify spending or waiting on.

Your cpu is enough to handle anything, you've no restrictions on gpu size. The only restriction being availability.

The difference between a HDD and sata is huge.
By all means buy one, if budget is ample.
But, you would be better off with a normal 2tb samsung 870 EVO.

Love the case.

EVGA PSU quality is variable, depending on the particular model.
Check out psu quality tier lists for better options.
Here is one:

And, your cpu will support a much stronger graphics card.
I would buy 750w, the price difference is usually minimal.
A psu will only use the power demanded of it, regardless of the max capability.
