Today good graphics cards are all but impossible to buy, let alone at anything like twice MSRP.
I might suggest that you build using a I5-11500 which costs about the same as a 3600.
It has the same 12 threads and a passmark rating of 18203/3229.
3600 rating is 17866/2585.
The second number is the single thread performance which is arguably the more important metric for games.
The 11500 includes good 750 integrated graphics and lets you get started on some games while you shop for a graphics card .
A B560 motherboard will be no more expensive.
pcie 4 ssd devices have impressive sequential performance, but the reality is that you will see very little difference compared to a normal sata ssd.
The difference between a HDD and sata is huge.
By all means buy one, if budget is ample.
But, you would be better off with a normal 2tb samsung 870 EVO.

And, your cpu will support a much stronger graphics card.
I would buy 750w, the price difference is usually minimal.
A psu will only use the power demanded of it, regardless of the max capability.
