What graphics card and how many to run 1x1440p monitor and 2x1080p monitors

What graphics card and how many would i need to run 1x1440p monitor and 2x1080p monitors, one either side, using all monitors to play games like witcher 3 and gta v at ultra settings ALWAYS above 80fps

I would not pick 1x1440p and 2x1080p monitors for gaming (a better choice is to get 3x1440p monitors but the technology isn't quite there to push that many pixels in gaming; Even multiple sli Titan X's would struggle and game scaling would be a mess, not to mention stuttering even if you have a high enough fps).
Personally I don't like a 3 screen setup as the monitors bevels are not very nice to look at. Better to get a high quality 1440p 144hz g-sync monitor (I don't recommend a 4K monitor as of now as the technology is not matured and you could get much better 4K monitors with high refresh rates in 2016-2017 for a reasonable price) and enjoy. What would 3-way and 4-way 980 ti get for fps running on all monitors at ultra settings for games like witcher 3 and gta v?

With just a 2 way sli gtx 980 ti setup you can go for ultra settings on an 1440p 144hz monitor and still maintain high fps.
P.S. Keep in mind that two way sli is the sweet spot as it gives you best scaling, tri-way sli is about as max as I would go , and 4-way is a pain to configure (it actually reduces performance in some cases)
