What happens if I buy a 4266mhz ram kit and the motherboard supports only 4000mhz?
Will it go down to 4000mhz then? or are there different XMP profiles?

Solution
The 4266 XMP profile most likely won't work and you would need to manually dial in a stable working profile if a frequency 4000 or below isn't available.

XMP is off by default so you should have a stable system at the start.

There is no harm in trying the 4266 XMP ... worst case you clear the bios and try something different.
