I want to put in another GB of memory into my current system, the ram I want to put in is PC2-6400 at 800MHz..

the motherboard is an ASUS P5AD2-E Premium and says to support DDR2 711 natively.

What would happen? I figure it would just downclock itself, but I could be wrong..

If there's a setting on the BIOS that you can set your RAM clocks, then you could downlock it manually and it could work. If you can't I doubt the motherboard will recognize it and give you some POST error.

It will run at the maximum that the motherboard will allow so you don't need to change any settings the ram will automatically run at a slower setting.
