They have more security features and support ECC memory (normal ryzen does too, but unofficially, while these only use ECC)
They're usually more power efficient and get more validation.
Sometimes running 100-200mhz slower clocks to hit much lower tdp's and keeping the cpu much cooler with as minimal performance sacrifice as possible.
