What is the best cpu for 1080ti at 1080p 144hz?

I want a cpu that will not bottleneck a 1080ti so that I can achieve the highest fps possible in the most demanding games at ultra. I know some multiplayer games are very cpu demanding, and nowdays cpus get outdated faster than gpus. Is the i5 8600k good enough or should I go with an i7 model. I'm also considering a ryzen 7 2700k because it has 16 threads and seems futureproof.

The 8600K is more than good enough and if you want to go all out just for piece of mind then the 8700K will see you through. If this is purely a gaming focussed build and frame rates especially at 144Hz is key then the Intel side will give you what you want.

The Ryzen which is also great CPU but comes more into play at 1440P and 4K resolution where the GPU matters more so based on your query, the Intel's are better suited.

If you do go the Intel 8600K, 8700K make sure you get a Z390 motherboard so that you can upgrade in the future to the 9th Gen CPU's in the 9700K and 9900K. Right now the price is to high especially for the 9900K and the difference between them in performance is only a few percentage points and you can also overclock...
