personally I'd say the 10400/F is the best choice, while the newer processors will outperform the 10th gen chip it shouldn't be a huge margin if you're not doing anything CPU intensive.

And do keep in mind that if you buy a 400 series motherboard (such as the B460) your RAM speed will be locked at 2666MHz, and in 500 series boards (except the H510) you're free to overclock the RAM, which also includes 10th gen CPUs

running a 1060 as a daily driver too. Got an i5-10600KF to pair with it. Pretty good performance for my liking, but still going to upgade to a 1660Ti for VR gaming.

With 500 series board and 10th gen cpu - one M.2 slot will be unusable.
to people wondering why this is the case, here's an explanation (kinda unrelated to this topic, but I wanted to say this anyways):

Comet Lake only have 16 PCIe lanes, and these all goes to the GPU, leaving the M.2 routed through the chipset.
Rocket lake have 20 PCIe lanes, 16 for the GPU and 4 for M.2, so 500 series mobos have that M.2 directly connected to the CPU, but in Comet Lake, the corresponding lanes are missing, so the M.2 doesn't get detected, and thus is unusable
