Z97, H97, B85, H81 - What is the difference between them and which one is the best for gaming?

It depends on what system do you plan to run.
If you plan to overclock and SLI - Z97 is your choice. No SLI, no OC - H97/B85. H81 is pretty budget option with less/limited features.
Chipset itself has insignificant impact on your gaming performance.
