Honestly, neither. Not unless you have some compelling reason why you are trying to put together an 8 yr old lga2011 system.

The 3960x has 100MHz higher clocks and 15MB of cache vrs the 12MB of the 3930k. But other than that, for gaming there's not all that much difference. You get similar performance from a Ryzen R5 1600 without the pain of cooling a 130w cpu on an 8 yr old motherboard that is no longer supported and isn't easy to fit/find parts for anymore.
 
I agree, extreme editions aren't meant to game, but they can if you have a mobo find a cpu for cheap.
Unfortelly i can't buy Ryzen. I have Pc Alienware Aurora R2 so The best option is motherboard lga 2011 to Alienware Aurora R4.
I7 3960X cost only 99.87$. !😉
I7 3960x is better than i7 6700K 9%
So i7 3960x is same perfomence Ryzen 5 2600
This is great CpU for games :)
 
A 3960X at 3.9 GHz is likely not going to match the typical 6700K (typically running at 4.7 GHz) in very many games, but, if you feel it's the bee's knees, enjoy/knock yourself out...

It does appear that, if/when OC'd to 4.5 GHz, the 3960X might then match the R5-1600, but, each would likely trail a 6700K/7700K at similar clock speeds, considering the 1600X trails both....

There are different ways to measure performance, and not all will be relevant to most games. The 3960X has more cores than a 6700K, but each of the 6700K's cores can clock higher. The vast majority of games will only make full use of a limited number of threads, so those extra cores will be sitting relatively idle in most games, not contributing to performance. As a result, the higher per-core performance of the 6700K will generally provide better gaming performance.

What are your current full system specs now? In most newer games, your GTX 1060 will likely be more of a limiting factor to performance at 1440p than your CPU.
