Because games mostly can utilize up to 4 cores. 8 core I7 is similar performance. If you have enough budget, go for I9-9900k with a beefier cooler.

There is no incompatibility with respect to monitor. Any monitor will do, just some have better features, like freesync/gsync.

I will have a look now but also I have found a monitor with 1440 and the connection are HDMI and dp would this be ok

Don't worry it wasn't 144hz
