Quality wise, they are the same. The difference comes in the ports. The pro has 2x ram slots, the mortar has 4, but since 32Gb of ram is beyond necessary, 2 is fine, and most ppl running 16Gb will only use 2x anyways. The Pro has the basic 3x audio ports the mortar has 6x, more for surround from board where the Pro usually has nothing but headphones on it anyways.

Basically, the gaming pro is built around what gamers will actually use, the mortar is more of an all in one/media/video board.

The B250M mortar has two PCIe slots (other one has one) and supports up to twice as much as the max RAM the other one has (64 vs 32). The two PCIe slots allow for a Xfire configuration if you choose to use one, which is an option you might want in the future. If they're both available for the same price, the MORTAR is better.
