What processor should I get... or should I even get a new one? Will I notice a difference while gaming?

I currently have..
Motherboard: MSI 970A-G46
CPU: AMD FX-6300
GPU: MSI GTX 770
RAM: 16gb 1600mhz (2x4)
PSU: 1000w
HDD: Toshiba 1tb

I was thinking about going for the 4770k with the 'Maximus VI Hero' or 'GA-Z87X-UD4H'
I was also thinking about the FX 8350 with the 'GA-990FXA-UD3'

Should I even upgrade? If so, to what? How big of a difference would your suggestion make when it comes to gaming?

If your games are performing to your liking, I see no reason to upgrade. If not, I would consider a Xeon 1230v3 and a Z87 extreme3, if you want SLI capability. In CPU dependant titles like Skyrim, and most MMO's, Intel is a clear winner. In the more multithreaded titles like Crysis 3 and BF4, the performance gap is much smaller. I personally wouldn't go from an FX 6300 to an FX 8320/8350 though. Not much of an upgrade there.

I'd never considered going with a server processor over the more traditional desktop variant. That's a good thought. Can Xeons be overclocked like the K versions of i5s and i7s? Also, what's the performance difference like? The extra 2Mb of L3 Cache is nice, but does the "optimization" for servers make a difference in regular desktop applications?
