What Wattage PSU for :

• RTX 3070
• Ryzen 5 3600
• DDR4 2x8GB (Future would be 32GB or 64GB)
• some SSD's and maybe a harddrive

Probably a 650W model would be optimal. You could get away with less, but considering your build that's what I'd go for.
You should get a great quality model... the choice solely depends on the availability in your country.
