What resolution fits my rig?

My question:

What game resolution makes 60FPS/Good gaming performance possible and beneficial for the health of the laptop with any game..?

Depending on if you mind playing on low/medium I would say 1080p. otherwise I would suggest 900p, but 1080p should be do able.

It will depend on the game.
The older games might be fine at medium 1080p, but some of the more demanding titles (even older ones like witcher 2) will struggle to maintain 60fps.

You can see some games will do well, others not at all.
In terms of laptop health, best way to keep it fine:
A) Make sure fan is clean at least once each 6 months.
B) Change thermal paste each 1 year on CPU and GPU for a decent brand.
C) Get a cooling stand, especially if you want to use the laptop on uneven surfaces (like in bed).
