Can I do like Ryzen 5 3600 but 8gb of ram? I can upgrade the ram later

What parts do you now have that you could possibly reuse?
Do you now have a discrete graphics card?
I built a ITX pc for my son using a i3-10100 processor, a lga1200 motherboard and a 2 x 8gb kit of ddr4 ram. I think those parts cost about $250.
The integrated HD630 graphics was sufficient to run civ 4.

This seems like a great option and it leaves room for upgrades as well.
