What should I go for

A r5 2600x with a h100i v2 or a r7 2700x without
Or even an i7 8700k with a h100i v2.

I will use it for gaming, some video editing and maybe streaming.
 
Solution
For high fps/Hz the 8700k is the clear winner, its stronger cores just come into their own. However with a 1070Ti @ 1440p you are more gpu bound and you wont see as big of a difference over Ryzen. If running a 1080Ti the extra cpu performance of the 8700k would be far more noticeable.
