In an ideal world I'd like to run read dead 2 at a decent texture quality at 60 fps.

FYI, if you want to play red dead 2, you may need to buy a console. Right now it is not expected to release on the PC. I bet that it will one day, but it will be awhile till they do.
Your GPU is going to hold you back no matter what you do. The 1050 is a budget card and it will be a 1080p/60fps card with low settings on current and new AAA games. Some games you will be able to run medium, but it is what it is. I would upgrade the platform, then in a few months look at a 580/1060.
