I am currently have a I7 920 clocked at 4GHZ and was thinking about upgrading. I see that the Ivy bridge is coming out here soon for socket 1155. But I'm not sure what would be better to get a Sandy bridge socket 2011 CPU. I found a EVGA Bundle I7 3930k and EVGA x79 FTW bundle for $749

I am making a Hyper -v Serve so that what I am going to use my I7 920 for. I would rather put money into my gaming pc than my server which is for playing around with.

So you're re-purposing your i7-920 and it's not going to be available for gaming?

And you're building a new gaming system?

Probably - Ivy Bridge - but you also want to wait about 3 more days till you see all the IB reviews showing up on Monday.

Yes, that is best - for gaming, wait to see how the i5-3570K performs, then decide whether to get that or an i5-2500K. Ivy is supposed to have native support for USB 3.0, but I don't know how that improves gaming experience. If 3570K ends up performing close to 2500K, I would go for whichever one is cheaper at that time (probably 2500K).
