Question What size M.2 is necessary for operating system?

Hello all. I am in the process of building my first PC and i could use some help. I was planning on buying (2) M.2 drives for my new PC. I have been doing my research and found that having a drive dedicated to the operating system is a good practice. My question is if your going to dedicate a hard drive to just the operating system what size is appropriate? Logically i was thinking that a 500GB for the operating system would be fine, and in addition i was going to purchase a 2TB for pretty much everything else. Please let me know if my thinking is correct or what you think is the best way to set things up. Thank you all in advance!

personally, separating OS drive doesn't seem necessary. Just one 2TB drive with single partition would work fine.
Great time to buy a new 2TB drive by the way. I just saw SK Hynix P41 price dropped to 169.99 on amazon.
