What CPU temp should i expect with Gigabyte B550 AORUS MASTER, Ryzen 5 3600 4.2Ghz, Grizzly thermal paste, Thermaltake 240mm water 3.0 , Fractal Design 7 case?

Idle and gaming.

nothing specific, just a general range.

Thanks

Depends largely on your voltage, what is it set to? If this is a new build, Ryzen's built in automatic overclock protocols might set the voltage to around 1.45V which will generate a LOT of heat. Make sure Precision Boost Overdrive and any other "game mode/performance mode/auto clocking setting is disabled in BIOS and that your voltage is as low as possible while still running stable at that clock speed. The Ryzen Master software helps test voltage and other clock settings with a built in stress tester so that you can find the best settings and apply them on your BIOS (Ryzen Master will not apply/save the settings).

After that, you may see idle temps anywhere from 30-50C. and gaming temps probably around 60-75.
