Looking to eventually upgrade both, but wondering what the better option would be now. I'm currently running:

Intel Core i5-750
ASRock P55 extreme mobo
Radeon HD 5850
16gb RAM (GSkill Ripjaws X DDR3 1600)

I'm leaning towards upgrading the GPU by getting an R9 380 (4gb). Just wondering if there would be a bottleneck with the CPU?

I agree going with the GPU first. Since you should be upgrading the CPU/Motherboard soon-ish (next year or so) it does not matter if the GPU is limited. You need to buy the GPU for your 'next' system. If there are limits with that CPU, they will be modest and situational.

I'm assuming this is a gaming system. What games?

Yes, primarily a gaming system. Currently playing Pillars of Eternity, Divinity Original Sin, Fallout 3, Witcher 2, I re-install Minecraft a couple times a year. Looking to pick up Witcher 3, Fallout 4. I'm mainly into RPGs.
