what touch screen would you recommend for a special needs child who is showing a real interest in computers

I am trying to encourage my special needs daughters' interest in computers. I have a Windows 8 laptop with touch screen but it seems to be too complicated. I've heard Apple software is more intuitive but I don't know to much about Apple products with a touch screen. Does Android offer a solution? Thank you
