I was wondering how big of a PSU would you need for 2 2070's in SLI ? Currently have 850 Watt Gold.

Depends on the exact model of the 2070s and the rest of the hardware in the build, and whether you intend to overclock or not.

850w should be fine, but what exactly is this 850w psu?

Just a heads up: the axial fan cooled gpus do NOT do well in tight spaces. I strongly suggest you get a 4slot NVLink Bridge along with a motherboard with the same 4slot spacing between it's PCIe x16 slots.
If not the above, then the blower models instead; they are ideal for tight spaces.

A 3slot NVLink isn't necessary for a blower; they are ideal for 2slot bridges, or in other small spaces.
I skipped 3slot and went straight to 4slot for the axial fan models because the more 'breathing room' they have, the better.
