What will happen when a run a motherboard without its drivers?

I have a Gigabyte GA-EX58-UD3R. Its driver downloads are only supported up to Windows 7. I want to run Windows 8, so what will happen if I don't run the drivers for the motherboard? Also, is there a way to download drivers for other operating systems?

Most of the drivers on 7 will work with 8.

Also, windows 8 includes most drivers and you usually don't need to install motherboard drivers separately. I bet they have drivers for your MB already.
