What would be a good CPU for both gaming and editing?
The quick answer and depending where you live and which is cheaper would either be Ryzen 5 3600 or i5 10400f

If those 2 aren't within your budget, go for an older ryzen 5 instead and DON'T go for an older intel EVER

Or if you just sold GME stock and got 10K richer, there's also the Ryzen 9 5950x tho it's basically overkill for any kind of task

If editing is a priority, start with 8 core models with multithreading. Depending on the software you use, Intel may be better than AMD because of dedicated encoder/igpu flexibility stuff.

For gaming, look for higher boost clocks. Any cpu made in the last 4 years with a turbo over 4.1Ghz will push plenty of frames.

You can game on anything modern and decent. That's not a question. The question is exactly what are your planned software needs for the editing? That'll determine the hardware needs. Some programs and work can require 32-64Gb of ram, some only need 16Gb. Some cpus need to be high core count or higher clock speed or high IPC. Some editing is mostly gpu work, so a more budget cpu is fine but a monster gpu is recommended. Some programs just work so much better/faster/fully on a Quadro card and aren't really supported by Rx/gtx/rtx cards.

Get the editing hardware sorted and gaming will be easy to adjust, the other way around makes life more difficult.
